

FIELD TO FIRE: An Exclusive Chef Series

Hog Heaven Sporting Club is proud to announce Field to Fire, an exclusive chef series bringing three of Austin’s top culinary talents to the Hill Country for live-fire cooking experiences you won’t find anywhere else.
Our final event features Jesse Griffiths, chef and owner of Austin’s Michelin-rated Dai Due and a leading voice in sourcing Texas ingredients, responsible hunting, and traditional butchery. Jesse will lead an immersive two-hour wild hog butchery class covering start-to-finish techniques—from breaking down the animal to sausage-making and seasonal cooking methods that’ll serve you well year-round.
After class, settle in for a family-style wild game dinner prepared live-fire on a Mill Scale grill, complete with seasonal sides that showcase Jesse’s signature approach to local, wild cuisine. The evening includes live music, complimentary wine and beer, and a book signing of the James Beard Award-winning The Hog Book: A Chef’s Guide to Hunting, Butchering, and Cooking Wild Pigs.
This is culinary education meets outdoor celebration—and it’s just the beginning of what Field to Fire has in store!
